Chocolate Fudge Pudding

Ingredients:

3 Eggs
25 gms Cocoa powder
150 gms soft Margarine
150 gms light Corn syrup
150 gms Self raising flour

Chocolate Fudge Sauce

4 tbsp Double cream
100 gms dark Chocolate
125 ml Sweetend Condensed Milk


Method:
Lightly grease a half liter pudding basin.
Place the ingredients for the sponge in a mixing bowl and beat until well combined and smooth.
Spoon into the prepared basin and level the top. Cover with a disc of baking parchment and tie a pleated sheet of foil over the basin.
Steam for about two hors until the pudding is cooked and springy to the touch.
To make sauce, break the chocolate into small pieces and place in a small pan with the condensed milk. Heat gently, stirring until the chocolate melts.
Remove the pan from the heat and stir in the cream.
Turn it out on to a serving plate and pour over a little chocolate fudge sauce. Serve the remaining sauce separately

Instant Chocolate- Malai Barfi :

Ingredients :

2 cups milk powder
1 cup almond meal
300 ml thickened cream
3/4 cup powdered sugar
1 tbsp cocoa powder

Method:

1. Place all ingredients except cocoa powder in a large microwavable bowl.
2. Mix well and place bowl in a microvave oven for 4 minutes on high cook.
3. Remove bowl and stir mixture. Place again for another 4 minutes.
4. Transfer half the barfi in a greased plate.
5. Quickly blend in the cocoa into the remainder and pour over the barfi in the plate and spread evenly.
6. Cool and cut into diamond shaped pieces.
7. Blanched nuts can be sprinkled on top along with silver varaq (foil

Sweet Rice


Ingredients

360ml/12fl.oz. Water

1 x 7.5cm/3-inch Cinnamon Stick

The rind of 1/2 a Lime (in large pieces)

100g/4oz Rice, washed

1 teasp Vanilla Extract

¼ teasp Salt

90ml/32fl.oz. Milk

1 small tin Condensed Milk

Ground Cinnamon



Instructions



1. Place the water in a large saucepan together with the lime rind and cinnamon stick and bring to the boil.



2. Add the rice, stir to mix then reduce heat and simmer for about 10 minutes.



3. Remove cinnamon stick and lime rind then add the Vanilla extract, salt, milk and condensed milk. Mix well then continue to simmer over medium heat for 1 hour, stirring often to prevent it sticking to the bottom and burning.



4. Transfer to individual serving dishes, allow to cool then refrigerate for at least 1 hour before serving sprinkled with ground cinnamon.

|Mango Rabdi|

Serves: 4 to 5

Ingredients:
2 litres full-cream milk
5 pieces green cardamom or chota elaichi, crushed and powdered
2-3 drop rose water
1 mango, mashed
A few pistachios for garnish

Method:
Heat the milk in a heavy-bottomed pan on a slow flame till it boils down by half. Add the rest of the ingredients. Mix well and allow it to cool. Refrigerate for a few hours. Garnish with pistachios and serve cold-

Strawberry Delight-----------Dessert

Ingredients
Basic Vanilla Icecream
250 gms. strawberries
1 tsp. gelatine (dissolved)

Method
Clean and halve the strawberries. Keep 3-4 whole ones for decoration.
These, slice into fan shapes as shown earlier. Beat icecream till soft and creamy.
Keep the beating dish in a bigger dish filled with icewater. This is to prevent
icecream for becoming liquefied.
Add gelatine solution, mix well. Use a decorative jelly mould.
Pour mixture into moist mould. Sprinkle half the cut strawberries here and there in
mixture.
Put in freezer to set well.

Just before serving:
Unmould onto a wide dish.
Arrange remaining halved strawberries along rim of icecream.
Decorate top with the sliced strawberries.
Serve instantly.

Chocolate and Biscuit pudding

Ingredients

* 10 marie biscuits
* 1 cup sliced cashew nuts
* 1/2 cup sliced almonds
* 1 tin of mix fruit
* 1 tbsp cocoa
* 1 1/2 tsps coffee powder
* 2 chocolate bars (plain or fruit and nuts)
* 1 bowl of custard sauce.(it should be thick
* 1 tbsp butter

FOR TOPPING;

* 250 gms cream(tinned)
* 1 1/2 tsps lemon juice
* 4 tsps sugar
* cherries for decorating

Directions

1. Prepare custard sauce and keep in refrigerator.
2. Break biscuits into tiny pieces,add coffee powder,cocoa powder and mix it.
3. Melt butter with chocolate and mix it with biscuit.
4. Take a transparent bowl, put this biscuit mixture and press with hand, and keep in refrigerator for half an hour.
5. Open tin of fruits and spread it on biscuit mixture with 2 tbsps of fruit syrup.
6. Pour a thin layer of custard sauce on it.
7. Whip cream with lemon and sugar till fluffy.
8. Swirl all around the pudding, decorate with cherries.
9. Serve cold.

Strawberry Cheesecake Recipe

Strawberry Cheesecake Recipe Ingredients:
150g/6oz Digestive Biscuits
75g/3oz Butter melted
225g/8oz Cottage Cheese
150ml/ ¼ pint fresh Double Cream
50g/2oz Caster Sugar
2 cups sliced Strawberries

Strawberry Cheesecake Recipe Instructions:
Crush biscuits.
Melt butter in a bowl then add the crushed biscuits.
Use half the mix to cover the base of a 18cm/7in flan case and chill
Rub cottage cheese through sieve.
Whip cream until thick.
Fold cottage cheese, sugar, and strawberries into the cream.
Spread mixture over the crumbs.
Top with lattice of the remaining crumbs.
Chill for 1 hour before serving.

Strawberry Cheesecake Recipe Cooking Time:
Chill for 1 hour

Strawberry Cheesecake Recipe Serving Instructions:
Serve with cream or ice cream if required
Add sliced strawberries

Bread Pudding Recipe

Bread Pudding Recipe Ingredients:
6 slices day-old Bread
2 tablespoons Butter, melted
1/2 cup Raisins (Optional)
4 Eggs, beaten
2 cups Milk
3/4 cup white sugar
1 teaspoon ground Cinnamon
1 teaspoon Vanilla extract

Bread Pudding Recipe Instructions:
Preheat the oven to 350 degrees F -175 degrees C
Break bread into small pieces and put in a 8 inch square baking pan.
Put melted butter or margarine over bread. If wanted add raisins.
Mix very well Eggs, Milk, Sugar, Cinnamon, and Vanilla In a medium mixing bowl.
Pour over the bread, then lightly push down with a fork until bread is covered and soaking up the mixture.
Bake in the preheated oven for 45 minutes, or until the top returns back when lightly tapped.

Prepare time 25 minutes
Cooking time 45 minutes
